Ingredients
  

  • 8 tablespoons salted butter
  • ½ cup white sugar preferably raw cane sugar
  • ¼ cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 ½ cups all-purpose flour 6.75 ounces
  • ½ teaspoon baking soda
  • ¼ teaspoon salt plus extra if desired
  • ¾ cup chocolate chips or a mix of chocolate chips and chunks

Instructions
 

  • Preheat the oven to 350°F and melt the butter in the microwave, then let it cool slightly.
  • Beat the melted butter with the sugars until creamy, then mix in the vanilla and egg.
  • Gradually add the flour, baking soda, and salt, mixing until crumbly, then form into a dough and incorporate chocolate chips.
  • Roll the dough into balls, place on a baking sheet, and bake for 9-11 minutes until puffy and lightly golden.
  • Cool the cookies on the baking sheet for about 30 minutes to firm up.

Notes

Cookies can be stored in an airtight container at room temperature for 3-4 days or in the refrigerator for up to a week. For freezing, roll the dough into balls, freeze on a sheet pan, then transfer to a bag for storage. Thaw before baking. For high-altitude baking, increase the oven temperature to 375°F and reduce baking time slightly.
