Ingredients
  

  • 1 15-ounce can chickpeas, drained and rinsed
  • 1 avocado, pitted and diced
  • 4 ounces feta cheese, crumbled
  • ½ cup red onion, thinly sliced
  • ½ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 clove garlic, minced
  • ½ teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

  • Rinse and drain the chickpeas under cold water.
  • In a large bowl, combine chickpeas, avocado, feta, red onion, parsley, and mint.
  • Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper in a small bowl.
  • Drizzle the dressing over the salad and toss gently; serve immediately or refrigerate.

Notes

To prevent the avocado from browning, toss it with lemon juice right after dicing. If fresh herbs are unavailable, use dried herbs but reduce the amount by half.
