Ingredients
  

  • 4 cups shredded cooked chicken approximately 2 large breasts
  • 2 cups instant rice
  • 1 can cream of chicken soup (10.5-ounce)
  • 1 cup sour cream
  • 1 cup frozen diced onion and bell pepper blend
  • 1 can diced tomatoes with chilies (10-ounce, undrained)
  • 1.5 cups chicken broth
  • 1 packet fajita seasoning (1.12-ounce)
  • 1 package shredded Mexican blend cheese (8-ounce, about 2 cups)

Instructions
 

  • Preheat the oven to 350°F and coat a 9×13 inch baking dish with nonstick spray.
  • Combine the chicken, rice, cream of chicken soup, sour cream, frozen vegetables, diced tomatoes, chicken broth, fajita seasoning, and half of the cheese in a bowl.
  • Transfer the mixture to the baking dish, cover with foil, and bake for 35 to 45 minutes until the rice is tender.
  • Remove from the oven, add the remaining cheese on top, and bake until melted.

Notes

Use rotisserie chicken for convenience. Adjust cheese and vegetables to your preference for added flavor.
