Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup buttermilk To make 1 cup buttermilk, mix 1 tablespoon vinegar or lemon juice with milk. Alternatively, mix 1 cup milk with 1 3/4 teaspoons cream of tartar.
  • 1 egg
  • 0.25 cup melted butter
  • 1.5 cups shredded extra sharp cheddar cheese Use extra sharp or aged cheddar for optimal flavor.
  • 3 tablespoons chopped chives
  • 1.5 cups shredded zucchini Excess water removed. Squeeze excess water from shredded zucchini using a flour-sack towel before adding to the batter.

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan by spraying it with non-stick cooking spray.
  • In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and salt. In a separate bowl, whisk the buttermilk and egg, then add the melted butter and whisk until fully combined.
  • Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to over-mix. Fold in the shredded cheese, zucchini, and chives.
  • Transfer the batter to the prepared loaf pan. Bake for approximately 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before inverting it onto a cooling rack. Cool for an additional 5 minutes before serving.

Storage & Reheating

  • Loaves can be frozen for later use. Warm slices in a microwave or toaster oven before serving.

Notes

To make buttermilk, mix 1 tablespoon vinegar or lemon juice with milk, or 1 3/4 teaspoons cream of tartar with 1 cup milk. Ensure zucchini is well-drained to prevent a soggy loaf. For best flavor, use aged cheddar. You can also add extra cheese and chives on top and broil briefly. This bread freezes well and can be reheated in a microwave or toaster oven.
