Ingredients
  

  • ¼ cup olive oil plus more for greasing the pan
  • 32 ounces baby Bella or crimini mushrooms sliced
  • 1 cup onions chopped
  • 2 teaspoons Diamond Crystal kosher salt or 1 teaspoon of any other salt
  • 1 tablespoon fresh garlic minced
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • 1 cup Gruyere cheese shredded
  • 1 teaspoon dried parsley for garnish

Instructions
 

  • Preheat the oven to 400°F and grease a 2-quart baking dish with olive oil.
  • In a large skillet, heat olive oil and sauté mushrooms, onions, and kosher salt until mushrooms release their liquid, about 10 minutes.
  • Add garlic, black pepper, and thyme, cooking for an additional minute before removing from heat.
  • Transfer the mixture to the baking dish and top with Gruyere cheese.
  • Bake until hot and bubbly, approximately 15 minutes, then garnish with parsley before serving.

Notes

For a crispy top, broil the casserole for 2-3 minutes after baking. Adjust seasonings to taste and store leftovers in an airtight container for up to 4 days.
