Ingredients
  

  • 4 cups chopped broccoli
  • 1 10 ounce can cream of chicken soup or cream of mushroom
  • 1 cup mayonnaise or Miracle Whip, Greek yogurt, or sour cream
  • ¼ cup melted butter (1/2 stick)
  • 2 large eggs slightly beaten
  • ½ medium yellow onion finely chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 ½ cups extra sharp cheddar cheese
  • ½ sleeve Ritz crackers crushed

Instructions
 

  • Preheat the oven to 350°F.
  • Steam the broccoli for about 5 minutes until tender.
  • Chop the steamed broccoli and place it in a mixing bowl.
  • Mix in the cream of chicken soup, mayonnaise, melted butter, eggs, onion, salt, and pepper.
  • Stir in 3/4 cup of cheddar cheese until combined.
  • Spray an 8x8 inch casserole dish with cooking spray.
  • Transfer the mixture into the prepared baking dish.
  • Top with the remaining cheddar cheese and crushed Ritz crackers.
  • Bake for 30 minutes until the cheese is melted and the top is golden.

Notes

The casserole can be made ahead of time and stored in the refrigerator for 3-4 days before baking. If freezing, prepare without the cracker topping and bake later. Thaw frozen casserole in the refrigerator for 24 hours before baking.
