Ingredients
  

  • 3 lbs Pork shoulder
  • 1 cup Orange juice
  • ¼ cup Lime juice
  • 1 tbsp Cumin
  • 1 tbsp Oregano
  • 1 tbsp Smoked paprika
  • 1 tbsp Chili powder
  • 1 can Black beans (rinsed)
  • 1 cup Corn
  • ½ cup Sour cream
  • 1 tbsp Lime zest
  • 2 cups Romaine lettuce
  • ¼ cup Fresh cilantro

Instructions
 

  • Season the pork shoulder with spices and citrus juices in a slow cooker and cook until tender.
  • Shred the pork and broil or crisp it in a skillet until edges are crispy.
  • Prepare rice by boiling and simmering until fluffy.
  • Whisk together sour cream, lime juice, and zest for the lime crema.
  • Assemble bowls with rice, beans, corn, lettuce, salsa, carnitas, crema, cilantro, and lime.

Notes

Store carnitas, rice, beans, and crema separately in airtight containers for up to four days. Reheat gently and customize with toppings like avocado or jalapeños.
