Ingredients
  

  • 2 pounds red potatoes scrubbed and cut into 1-inch pieces
  • ½ bell pepper diced (or 1 jalapeno)
  • 1 stalk celery diced
  • 1 tablespoon green onion chopped
  • 1 tablespoon parsley chopped
  • ¾ cup mayonnaise
  • ¼ cup Creole mustard or whole grain mustard
  • 2 teaspoons cayenne pepper
  • 1 teaspoon paprika
  • Salt to taste
  • black pepper to taste
  • 6 hard boiled eggs chopped

Instructions
 

  • Boil potatoes in salted water until fork-tender, about 10 minutes. Drain and let them cool slightly.
  • In a large bowl, whisk together mayonnaise, Creole mustard, cayenne pepper, paprika, salt, and black pepper until smooth.
  • Gently fold the cooked potatoes into the dressing, ensuring they are well coated.
  • Stir in the chopped hard-boiled eggs.
  • Taste and adjust seasonings as needed.
  • Serve immediately or chill in the refrigerator before serving.

Notes

Peeling potatoes is optional; leaving skins on adds texture and nutrition. Raw peppers and celery add crunch; sautéing them briefly creates a softer texture. For a creamier consistency, mash the potatoes slightly while mixing. For a chunkier salad, stir gently to keep potatoes intact. Optional additions include red onion, dill pickles, sweet pickles, relish, or vinegar. Yellow mustard or Dijon mustard can substitute for Creole mustard.
