Ingredients
  

  • 1 lb kielbasa smoked sausage
  • 1 ½ tablespoons olive oil divided
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 medium head cabbage cored and chopped into 1-inch pieces (approximately 2 lbs)
  • ¾ teaspoon kosher salt plus additional to taste
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon red wine vinegar

Instructions
 

  • Cut the kielbasa in half lengthwise and slice into 1/2-inch pieces.
  • In a large skillet, heat 1/2 tablespoon of olive oil over medium heat, add kielbasa, and cook until browned, about 3 minutes per side.
  • Lower heat to medium-low, add remaining oil and onion, and cook until the onion softens.
  • Add garlic, cabbage, salt, and pepper; mix well, cover, and cook until cabbage wilts, about 12 minutes.
  • Stir in red wine vinegar, return kielbasa to skillet, mix, cover, and cook for an additional 3 minutes.
