Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound smoked kielbasa sliced into 1/4 inch rounds, then halved
  • 1 medium onion sliced into thin strips (about 1 cup)
  • 1 medium carrot peeled and cut into thin ribbons
  • 2 cloves garlic minced
  • 1 head cabbage core removed and cut into roughly 1-inch chunks (about 2 pounds)
  • 1 tablespoon apple cider vinegar
  • 1 ½ teaspoons seasoning salt
  • ½ teaspoon ground black pepper

Instructions
 

  • Heat a large nonstick skillet over medium heat, add 1/2 tablespoon of olive oil, and swirl to coat.
  • Add sliced kielbasa and brown on both sides for 3-4 minutes, then transfer to a clean dish.
  • In the same skillet, add remaining oil, then sliced onions and cook until nearly translucent, about 4 minutes.
  • Add carrot ribbons and minced garlic, cooking until carrots soften and garlic is aromatic, about 2 minutes.
  • Incorporate cabbage, tossing to coat in oil.
  • Add apple cider vinegar, seasoning salt, and pepper, mixing to coat cabbage, and cook until softened, about 15-20 minutes.
  • Return kielbasa to the skillet, mix to combine, and cook until heated through.

Notes

Ensure the cabbage is sliced evenly for uniform cooking. Allow the kielbasa to brown fully for optimal flavor and texture. Monitor the cabbage to prevent overcooking; it should remain crisp.
