Ingredients
  

  • 1 cup mayonnaise
  • 1 tablespoon Swerve or other sweetener
  • 2 tablespoons apple cider vinegar
  • 3 cups raw broccoli florets
  • 3 cups raw cauliflower florets
  • ½ red onion, chopped
  • ½ cup shredded cheddar cheese
  • 8 ounces cooked and crumbled bacon
  • ½ cup raw pecan pieces
  • Salt and black pepper to taste

Instructions
 

  • Cook the bacon until crispy, then crumble it and set aside.
  • Whisk together mayonnaise, Swerve, and apple cider vinegar in a small bowl.
  • Chop broccoli, cauliflower, and onion into bite-sized pieces and combine them in a large bowl with cheese and pecans.
  • Pour dressing over the salad and toss to combine; reserve bacon for serving if preparing in advance.
  • Refrigerate until ready to serve for optimal crunch.

Notes

The salad can be made a day in advance and will maintain its crunch. Mix in the bacon just before serving to keep it crispy.
