Ingredients
  

  • 4 large Tortillas Extra-large recommended.
  • 8 Eggs
  • 2 cups Cheese Various types.
  • 1 lb Sausage Regular or chicken.
  • 2 cups Vegetables E.g., peppers, sweet potatoes, collards.
  • 1 cup Refried beans
  • 1 cup Black beans
  • 2 cups Tater tots Optional.
  • Seasonings Salt, pepper.
  • Optional toppings Avocado, sour cream, lime, salsa, hot sauce.

Instructions
 

  • Prepare all ingredients and ensure they are at room temperature.
  • Lay out a tortilla and fill it with your choice of eggs, cheese, sausage, and vegetables.
  • Roll the tortilla tightly to enclose the filling.
  • Wrap each burrito in heavy-duty foil and label with the date.
  • Freeze the burritos for later use.
  • To reheat, bake in an oven at 350°F for 15-20 minutes, or use a microwave or toaster oven.

Notes

Use extra-large tortillas for easier rolling and wrapping. Customize fillings based on available ingredients; rice, quinoa, or farro can be added as substitutes for potatoes. Gluten-free tortillas can be used; avoid corn tortillas as they may dry out in the freezer. Serve with toppings of choice for added flavor.
