Ingredients
  

Crust and Crumble Topping

  • 1 cup unsalted butter melted
  • 2 cups all-purpose flour (250g)
  • 1 ½ cups old-fashioned rolled oats (150g)
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup light brown sugar packed (200g)

Blueberry Layer

  • 16 ounces fresh blueberries
  • ¼ cup granulated sugar
  • 2 Tablespoons fresh lemon juice
  • 1 Tablespoon cornstarch

Instructions
 

Crust and Crumble

  • Preheat oven to 350°F and line an 8x8-inch metal pan with parchment paper.
  • Combine melted butter, flour, oats, brown sugar, cinnamon, and salt in a large bowl until it resembles sandy clumps.
  • Set aside 1 heaping cup of the mixture for the topping. Press the remaining mixture firmly into the prepared pan to form the crust.

Blueberry Filling and Assembly

  • In a separate bowl, toss blueberries with granulated sugar, lemon juice, and cornstarch.
  • Spread the blueberry mixture evenly over the crust. Sprinkle the reserved crumble mixture over the top.

Baking and Cooling

  • Bake for 50-55 minutes, covering with foil if the top browns too quickly. The bars are done when golden brown and the blueberries are bubbling.
  • Cool in the pan for 30-60 minutes. Use parchment paper to lift the bars out and cool completely before slicing.

Notes

These bars can be made gluten-free, dairy-free, and refined sugar-free with simple substitutions. Other fruits like peaches or strawberries can be used instead of blueberries. Store leftovers in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months. Serve warm, optionally with vanilla ice cream.
