Cake

  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • cup butter softened
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 eggs separated
  • 2 teaspoons vanilla extract
  • 3 cups blueberries fresh or frozen, thawed, drained, and coated lightly in flour
  • 1 lemon zest of

Lemon Glaze

  • 2 tablespoons lemon juice
  • About 1 cup confectioners' sugar

Instructions
 

  • Preheat oven to 350°F (175°C) and prepare a 9x13-inch baking pan by greasing and lightly flouring it.
  • Coat blueberries in flour and shake off excess. Separate eggs into yolks and whites.
  • Whisk together flour, baking powder, and salt in a large bowl.
  • Cream butter and sugar until light and fluffy. Add egg yolks one at a time, then mix in vanilla extract.
  • Alternately add the dry ingredients and milk to the butter mixture until just combined.
  • Whip egg whites to stiff peaks and gently fold them into the batter.
  • Carefully fold in the blueberries and lemon zest, avoiding overmixing.
  • Pour batter into the prepared pan and bake for 45–50 minutes, or until a toothpick comes out clean.
  • While the cake bakes, prepare the glaze by mixing lemon juice and confectioners' sugar to your desired consistency.
  • Drizzle the warm cake with the lemon glaze immediately after removing it from the oven.
