Ingredients
  

  • 1 can organic black beans, drained and rinsed
  • 2 cups corn kernels fresh or frozen
  • 1 red bell pepper, diced
  • 1 jalapeno, finely diced
  • 1 /4 cup red onion, finely diced
  • 1 /2 cup fresh cilantro, chopped
  • 2 tbsp fresh lime juice
  • 1 /2 tsp salt
  • Fresh black pepper to taste

Instructions
 

  • Rinse canned black beans with cold water and drain.
  • Prepare corn: If using frozen corn, thaw under cool running water and drain. If using fresh corn, boil salted water, drop shucked corn in, boil for 5 minutes, cool, and cut kernels off the cob.
  • Dice red bell pepper, jalapeno, and red onion. Chop cilantro.
  • Juice fresh limes.
  • Combine beans, corn, vegetables, herbs, and lime juice in a large mixing bowl.
  • Season with salt and black pepper to taste. Adjust seasoning with additional salt or lime juice as needed.

Notes

Storage: Keep in an airtight container in the refrigerator for 3-4 days.
Substitutions: Black beans can be replaced with chickpeas or a bean medley. Bell peppers can be green, yellow, or orange. Jalapeno can be substituted with serrano (taste first to gauge heat). Onions can be shallots; green onions can be added as garnish. Lime juice can be replaced with lemon juice.
