  • 8 ounces cream cheese room temperature
  • 8 ounces Cool-Whip thawed
  • cup white granulated sugar
  • 1 ½ cups sliced strawberries
  • 1 ½ cups blueberries
  • 1 ½ cups raspberries
  • 1 ½ cups blackberries
  • 1 teaspoon clear vanilla extract

Instructions
 

  • In a large mixing bowl, combine the room temperature cream cheese, sugar, and vanilla extract using a hand mixer until smooth.
  • Add the thawed Cool-Whip to the cream cheese mixture and mix until it is fully combined and creamy.
  • Gently fold in the fresh strawberries, blueberries, raspberries, and blackberries until they are evenly distributed throughout the mixture.
  • Serve the berry cheesecake salad immediately, or refrigerate for one hour to allow it to thicken for a firmer consistency.

Notes

Use fresh berries for the best texture and flavor. Clear vanilla extract helps maintain the salad's white appearance, but any vanilla extract or paste can be used. Light or fat-free cream cheese and sugar substitutes like monk fruit or stevia are acceptable alternatives. Store leftovers in an airtight container in the refrigerator for up to 2 days.
