Ingredients
  

  • 2 medium zucchini (7-8 inches / 20 centimeters long)
  • 11 thin slices ham or prosciutto
  • 11 thin slices cheese (e.g., Fontina, Gruyère, Swiss, or firm mozzarella)
  • cup breadcrumbs approx. 54 grams
  • ¼ to ½ teaspoon dried parsley
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • 3-4 tablespoons olive oil for brushing pans and zucchini

For Serving (Optional)

  • fresh chopped parsley for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C) and lightly oil a large and a small baking sheet.
  • Slice the zucchini lengthwise into thin strips, about the thickness of pie dough, ensuring they are rollable but not too fragile.
  • In a shallow dish, combine breadcrumbs, parsley, oregano, and salt for coating.
  • Brush both sides of each zucchini slice with olive oil, then dip into the breadcrumb mixture to coat evenly.
  • Arrange the coated zucchini slices on the prepared baking sheets and sprinkle with any remaining breadcrumbs. Bake for about 15 minutes until tender and lightly browned.
  • Remove from the oven and let the zucchini slices rest for 5 minutes.
  • Top each zucchini slice with a piece of ham and a slice of cheese. Roll the zucchini tightly and secure with a toothpick if needed.
  • Place the rolled zucchini back onto the baking sheets and bake for an additional 5 minutes, or until the cheese is fully melted.
  • Serve the baked zucchini rolls warm, optionally garnished with fresh chopped parsley.

Tips

  • For uniform slices, a mandoline slicer is highly recommended. Avoid overbaking the initial zucchini slices to prevent them from becoming mushy.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2-3 days. For parties, thread 2-3 roll-ups onto wooden skewers for easy serving.
