Ingredients
  

  • 1 cup water
  • ¼ cup unsalted butter, diced
  • 2 tablespoons white granulated sugar
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • 1 large egg, cold
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying
  • ½ cup white granulated sugar for cinnamon sugar
  • 1 ½ teaspoons ground cinnamon for cinnamon sugar

Instructions
 

  • Mix sugar and cinnamon in a shallow dish to prepare the cinnamon sugar.
  • Combine water, butter, sugar, cinnamon, nutmeg, and salt in a saucepan and bring to a boil.
  • Stir in flour and mix until shiny and smooth.
  • Let the mixture cool for 5 minutes in a bowl.
  • Blend in vanilla extract and egg using an electric mixer until smooth.
  • Transfer the mixture to a piping bag fitted with a star tip.
  • Heat vegetable oil in a pot to 360°F.
  • Pipe 6-inch strips of dough into the hot oil and fry.
  • Fry churros for about 2 minutes on each side until golden brown.
  • Transfer churros to paper towels and roll in cinnamon sugar.
  • Serve warm with chocolate or caramel sauce.

Notes

Ensure the oil is at 360°F before frying for optimal crispiness. Avoid overcrowding the frying pan and let the dough rest briefly before piping.
