Ingredients
  

  • 6 cups chopped apricots
  • 3 jalapeño peppers, thinly sliced
  • 1 1.75 oz package Low Sugar Sure Jell pink box
  • 4 ½ cups sugar
  • 2 tablespoons lemon juice
  • 1 lime, zested and juiced
  • ½ teaspoon allspice
  • ¼ teaspoon ginger
  • ¼ teaspoon turmeric
  • 1 tablespoon butter optional

Instructions
 

  • Prepare the fruit by chopping apricots into small pieces (6 cups total). Thinly slice jalapeños; seeds may be removed if less heat is desired.
  • Sterilize jars, rings, and lids by submerging them in a pan of water, bringing to a boil, and boiling for 3 minutes. Keep warm.
  • In a heavy stock pot, combine apricots, sliced jalapeños, allspice, turmeric, ginger, butter, lime zest, and lemon and lime juice. Mix well.
  • Mix ¼ cup of sugar with the contents of the Sure-Jell package. Sprinkle this mixture into the pot and stir to combine.
  • Place the pot on high heat and bring to a boil, stirring constantly.
  • Once a full rolling boil is reached (a boil that cannot be stirred down with a spoon), add the remaining sugar.
  • Return the mixture to a boil and boil for exactly 1 minute, stirring constantly.
  • Remove from heat and immediately ladle the jam into the sterilized jars.
  • Place lids on jars and screw on tightly. Process in a boiling water bath for 10 minutes to seal the jars.

Notes

- Do not alter the specified amounts of fruit or sugar, as changing these ratios may prevent the jam from setting or cause spoilage.
- Apricots do not need to be peeled; simply clean them well and remove the pits.
- To clean the fruit, swish it in a solution of 1 part white vinegar to 3 parts water.
- Lids are not reusable and must be purchased new for each batch; jars and rings are reusable.
- Store sealed jars in a dark, cool place such as a pantry. Refrigerate any jars that do not seal proper
